Ingredients

  • Milk – ½ cup
  • Eggs – 2
  • Castor sugar – 1 cup
  • Flour – 1 ¾ cup
  • Brown sugar – ½ cup
  • Cocoa powder – 6 tablespoons

Molten Chocolate Cake

Ingredients

  • Unsalted Butter – ½ cup (113g)
  • Semi sweet chocolate (broken) – 6 ounces (170g)
  • Eggs – 3 large
  • Castor Sugar – 1/3 cup (65g) and 1 tablespoon
  • Vanilla extract – 1 teaspoon
  • Cream of tartar 1/8 teaspoon

Method

  • Preheat oven to 200C. Grease and flour ramekins and dust them with one tablespoon of sugar. 
  • Melt butter and chocolate over the double boiler.

Mango custard Gateau

Ingredients

  • Plain sponge cake – 1
  • Mango or vanilla prepared custard – 2 cups
  • Mango jelly (prepared) – 1 pack
  • Mango (Large) – 2

Method

  • Peel and cut mango into chunks. 
  • In a dish add a layer of cake.
  • Add a second layer of custard and then mango chunks.
  • In the end add a layer of mango jelly and finish off with another layer of custard.
  • Decorate or garnish with piping back, rainbow and chocolate sprinkles.

Amazing Chocolate Mousse

Ingredients

  • Marshmallows – 350g
  • Whipped cream – 284ml
  • Milk or dark chocolate – 500g
  • White Chocolate – 100g

Method

  • Melt both the chocolate in a saucepan until runny.
  • Once completely melted add marshmallows and keep on stirring until melted. Turn the flame off. 
  • Add two teaspoons of hot water along with whipped cream and mix the mixture well.
